So the “one take” is the new fad now?

Its not “one take” I guarantee you this is take 100+. It is however a continuous shot.
Omar: Its one take of many takes that were probably shot but its still called one take…
Mark, its technically called a long take and more specifically in this case its known as a plan-séquence (Sequence shot). “One take” usually refers to scenes where the director cannot afford a fuck up, such as scenes with huge expensive accidents (end of Terminator II).
